Simone insists on leading the tours himself so he can personally share his story—full of anecdotes and humorous moments—all within a rich cultural context. Beer is culture: in knowing its history, understanding how it's made, and consuming it mindfully.
Our tours always begin with a historical introduction in our small museum room, where Simone’s very first homebrewing equipment is on display. All the equipment has been used by Simone himself, from his first kit in 1998 to the milk tank from 2005. A brief overview sets the story of Birrone within the social and historical context of Italian craft brewing.
Right after, we head into the production facility, where we explain the general brewing process and how it differs from the methods used in the past. From this point on, the tastings begin—straight from the maturation tanks. Through beer tales and personal stories, we arrive at the final part of the tour, where we explain the origin of the phrase “Sagra Forever.”
