I like to imagine the inside of a maturation tank as a wonderful place where the particles of my beers spend their time joyfully partying and carefree.
Among happy little friends, they have incredible fun in their perfect world, waiting to become more beautiful and elegant, and to bring happiness to those who will drink them.

In 2018, through a special cherry processing method, Birrone developed a particularly intriguing and almost magical fermentation. In collaboration with the University of Padua, several yeast strains that emerged from this process were isolated, and two of the best were selected and preserved in cryogenesis.

After numerous trials using this yeast in the fermentation of its beers, Birrone had the insight that—since the yeast originated from fruit—it might be best suited to ferment apple juice.

The result was remarkably interesting, thanks to the soft, fruity character imparted by this unique yeast. In a very short time, Birrone launched the production of its own CIDER, positioning it in a niche of the Italian market that had yet to be explored.

Traditional ciders tend to be sharp and acidic, often unappealing to the broader public. In contrast, Birrone’s Cider is low in alcohol (4.8%), smooth, and aromatic. Drinking it feels like biting straight into a fresh apple.

With beer, we know how to do it all. Starting from Birrone’s creations, we gave life to Birrone Dreaming and Amore Amaro, our very own spirits.
With our ciders, we created the magic of HAPPLENESS, Birrone’s apple distillate, a true concentrate of Apple and Happiness.

That’s the secret behind the dozen or so new beers we release every year.

But here, we’re talking about very specific cravings: research on raw ingredients and their transformation. Brewing experimentation at its finest.

Spontaneous fermentations, barrel aging, fruit beers, and much more, all fall under Simone’s ever-growing list of passions.

These beers, which we can also call bold since they often contain dark or roasted malts, are not necessarily high in alcohol—in fact, they rarely are. The skill of a brewer has always been measured by the perceived alcohol content of high-gravity beers. In this, our brewery, Birrone, excels, as our most structured beers have always stayed true to our signature style: beers with strong character yet remarkably easy to drink.  

As an old brewmaster used to say, a high-alcohol beer must, above all, be well-balanced to be truly good. We maintain this balance in all our beers through an extended lagering process.  

This is why sipping a Cibus, an EX03, or a Punto G becomes a physical, warm, and immersive pleasure—deeply alluring. Pure seduction.

We have always sought to enhance our territory in every possible way, concretely supporting production that uses carefully selected local ingredients of various kinds.  

Simone, founder and brewmaster of Birrone, has spent years playing with different ingredients as if they were his toys—from beers made with hand-picked local fruits (cherries, apricots, gooseberries, pears, strawberries, and more) to those brewed with regional ingredients like Marano corn, Pignoletto d’Oro corn, and Einkorn wheat. He has also experimented with spontaneous fruit fermentations, pure spontaneous fermentations, and local fruit-based ferments.  

Since 2020, these experiments have evolved into a true passion, leading to the brewery’s transformation into an agricultural brewery, exponentially increasing our connection with the land. Today, we cultivate 25 hectares of grain and half a hectare of hop fields.

The passion for hops, particularly linked to "American" hopping techniques, gradually found its place here at Birrone over time. However, for us, hops have always been synonymous with Pils. Proof of this lies in the fact that since 2008, Brusca has been one of our flagship beers, characterized by abundant continental herbal hopping. The name of this beer category comes from a phrase often repeated by Simone, Birrone’s founder and brewmaster. Since his early homebrewing days, after visiting his friends—the soci dea bira—in Cavaso del Tomba and enjoying a good Pils, he would always say: “I could taste the bitterness (elegant herbal) all the way to Thiene.”

In this case, the historic payoff “Birrone – The beer to drink” takes shape in its easiest creations: beers meant to be enjoyed in good company, without any particular reason, simply because they are fantastic, fresh, and highly drinkable.  
Never trivial and never alike, each one has a strong personality that sets it apart from the others. However, all the beers share one common trait: they are easy to approach, intentionally designed as pint-worthy beers.  
Both top and bottom fermentations, often light in color, with a single goal: to make those who drink them happy.

We do it all ourselves

Cultivation

We grow almost all of our raw materials, including barley, wheat, hops, and corn.
The total cultivated area covers 25 hectares.

Production

Designed together with Soci’s, our facility is among the largest production plants in Italy’s craft brewing sector.

Distribution

Our distribution is direct and without intermediaries throughout Italy.
Our beers reach our customers fresh, lively, and vibrant—just like they are inside the maturation tank.
