An agricultural brewery that enhances the local territory
We have always sought to enhance our territory in every possible way, concretely supporting production that uses carefully selected local ingredients of various kinds.
Simone, founder and brewmaster of Birrone, has spent years playing with different ingredients as if they were his toys—from beers made with hand-picked local fruits (cherries, apricots, gooseberries, pears, strawberries, and more) to those brewed with regional ingredients like Marano corn, Pignoletto d’Oro corn, and Einkorn wheat. He has also experimented with spontaneous fruit fermentations, pure spontaneous fermentations, and local fruit-based ferments.
Since 2020, these experiments have evolved into a true passion, leading to the brewery’s transformation into an agricultural brewery, exponentially increasing our connection with the land. Today, we cultivate 25 hectares of grain and half a hectare of hop fields.
Among the delights of the territory and spontaneous fermentation
The ultimate expression of this has been achieved with our Cider: apple juice fermented with a native yeast strain that we selected, originating from a spontaneous fermentation of local cherries on beer wort. The yeast used here goes beyond any imaginable connection to the land—it is a magic born from the products of our territory, capable of transforming anything it ferments into a heavenly beverage.
In the case of our Cider, we have reached the pinnacle of flavor, enhanced by a unique residual sweetness that makes this type of drink exceptionally captivating.
